The Sweet Life: Sweet Potatoes
Trade your usual baked potato for a seasonal, golden sweet potato. Sweet potatoes owe their deep orange color to the beta carotene they contain and they're also a reliable source of antioxidants and Vitamin A.

Sweet Potato Mash
1 sweet potato per person
1 teaspoon coconut oil per sweet potato
1 fresh thyme teaspoon
Sea salt to taste
Cut sweet potatoes keeping skins intact into pieces and steam over boiling water in a steamer basket. Transfer to a bowl and mash with a fork. Add coconut oil, sea salt and thyme and continue mashing and mixing until the potatoes reach desired consistency.
